Hops have long been the darling of the beer world, and it is from the dry-hopping process in particular we drew the inspiration for our Wild Hop Gin. Cold distilling, like dry-hopping, emphasizes the floral attributes of fresh hops, rather than the bitterness that is brought out by boiling. We selected five varieties (Citra, Amarillo, Centennial, and Columbus, along with a NH heirloom vine we hand harvested locally) to infuse and distill using our rotovap process, then added structure to the gin with coriander, angelica, lemon, and ginger. This gin showcases the aromatic qualities of hops, with fruity and tropical notes fortified with piney juniper and floral, spicy coriander.
